Classic Bread Boule in KitchenAid ceramic bowl

Ingredients

375g All purpose flour (2 ½ cups)

2 ¼ tsp instant yeast

1 tsp kosher salt

1 ¼ cups warm water (110 deg)

Directions

Warm the KitchenAid bowl with hot water and dry out. Add flour, yeast, and salt and mix on low about 30 seconds. Set to 2 and slowly stream in water. Continue mixing until it forms a cohesive ball and pulls away from sides of bowl. Pull dough off hook back into bowl and dust with flour. Roll dough in bowl so it is covered in flour. Put cover on and place in proofing oven for 1 hour.

Uncover bowl and pull dough onto generously floured surface. Pull and fold dough until it becomes stiff. Shape dough into ball and put back in bowl. With seam side down Flour the ball and bowl and put back into proofing oven for 30 minutes.

Pull bowl from oven and heat to 450 degrees. Grease and flour bowl lid. Carefully turn bowl upside down on lid so dough is in center of lid. Wash and dry bowl and cover lid. Place in heated oven.

Bake at 450 for 30 minutes. Remove bowl and let bread bake for 5-10 minutes until desired browning is achieved. Remove from oven and let cool on rack.
